Mysterious quinces, how I love you!


Yesterday I chopped and boiled a big pile of quinces, and ruined the first batch of jelly with an accidental baking soda incident. Oops. So I chopped and boiled again and was left with a big bowl of watermelon coloured syrup.


And after adding sugar and boiling some more it magically became jelly. Not the kind of wibbly wobbly party jelly that kids love but delicious,


sweet, rose coloured jam like jelly.


And now I have twelve jars to keep & share. Twelve jars lined up on the window ledge,
like shiny jewels, and all from our beautiful old quince tree that keeps on
giving, year after year.


I've been baking & cooking a lot this week. It's so satisfying :)
Today I sent off a box of Anzac biccies to Charlotte in Melbourne,
(I hope she likes them. I  wonder if she found the whole lot of mumma love
I sent too, can you feel it Char?) The last lot of biccies I sent weren't the best but
  I've been perfecting the recipe and I think
I've got it right! Can't have the oven on too hot or they are too dry.
Go on, give them a try!

Anzac's
1 cup of rolled oats
1 cup of castor sugar
1 cup plain flour
1 cup of desicatted coconut
125 grams of butter
2 tablespoons of golden syrup
2 tble spoons of boiling water
1 teaspoon of baking soda
handful of choc chips (optional)

Pre heat oven to 180 for normal oven or 160 for fanforced. 
Mix all dry ingredients together while melting butter & golden syrup in a pan, gently.
Add baking soda to boiling water, pour into butter mixture and mix thoroughly.
Combine mixtures and stir. Add choc chips.
Make little ball of mixture and put onto baking tray, not too close together. Cook until golden brown,
about 10 or so minutes. Cool on a wire rack and then eat two with a nice cup of tea!
Yum!

The colour of the jelly is so divine. But I have one question- did you cry after the baking soda incident? I recently had a salt incident with my tomato chutney, and I'm telling you I cried. Like a baby.

yum! quince jelly and anzacs...
(you know, Jess and Cathie and I were having an anzac biscuits conversation last night, about adding things (like sultanas) to the recipe... I've always been against adding things, but now I want to try the choc chips!)

that jelly looks amazing, I have never made quince jelly. mum used to make the whole quince as a jam, very sweet!

My boys had a baking soda incident recently which left their cupcakes fizzy! I love your jars of quince jelly, there is something so wonderful about a line of homemade preserves!

Anzaz bikies and Quince Jelly, these are a few of my favourite things. You're on fire, the jelly looks sooo yum and perfect. I wonder why Quinces change colour when cooked.
THanks for the recipe!! I will have to try to make them, your ones were soo delicious, I just need some trays for the oven, oh and most of the ingredients.
How many does it make by the way?

Yum, Anzacs are my Hubby's favourite so I bake them heaps, I have never thought of adding a few choc chips for the kids to enjoy (and Hubby) as well, great idea, I shall try that next batch. Glad I found your Blog, your just full of wonderful and inspiring ideas....I love your little ducklings...and your family are just gorgeous... Karen GBJ :)

I'm a sucker for an Anzac, but quince jelly....mm mmmmm. I love it that quince fruit always looks a bit weirdy - not like it has such delicious potential...

Ha! Your post is practically scratch and sniff for me. My entire house smells of quince right now. Gorgeous pics.

Your quince jelly really sparks something in me. I've always wanted to attempt jams and jellies but never have. I wonder about apple jelly...we have an apple tree and a pear tree. Hmm...

Creatively, I am gearing up for my youngest 10th bday party in a week. I am making cloth drawstring bags to give as favors. I'll just put some fun candies and nail polish in them. I found gummy candy the size and shape of a fried egg! They are so funny. Take care. We just got 8 new chicks on Tuesday. Stop by to have peek at them :)

Oh quince jelly ... how divine! I might go and get some quinces for dessert - I cut them in half, core them and the stuff the core with a mixture of butter and brown sugar. Bake, cut side down until tender. Fragrant quinces, with their own caramel sauce - delish! Have a great weekend! Nic x
